summary: A highly regarded cooking and eating British heritage apple grown since the the Middle Ages. Keeps its shape when cooked.
identification: Medium to large, round tending to conic. The skin is glossy. Greenish yellow, washed red on the sun exposed side and striped on the shaded face. At maturity, the base colour is rich yellow washed dark red on the sun exposed side with pale red stripes on the shaded face. Abundantly marked with small russet lenticels. around the basin with larger, lighter lenticels scattered across the faces. The calyx medium size and partly open, set in a shallow, puckered basis. The stem is short and medium thick, set in a deep and narrow, heavily russetted cavity.
characteristics: The flesh is cream-coloured, firm and crisp. Juicy, sweet and brisk. Somewhat astringent when under-ripe.
origins: This is a very old English variety with mention of the pearmain in annual payments (tenures) in Norfolk as early as the 1200s.
cultivation: Moderately vigorous, upright spreding tree. Bears fruit on spurs. Produces best crops every other year.
