identification: Medium to large sizeround and flattened at the ends. The skin is pale green yellow, maturing to golden yellow washed with red, especially on the sun-exposed face which also has streaks of crimson. The stem is very short and set in a open and medium shallow, russetted cavity with streaks of russet extending out onto the shoulders. The calyx is
characteristics: Flesh is white, tender, coarse-grained, very juicy and sharp. Look for a distinct aniseed flavour when fully ripened, more balsamic when picked a few weeks early.
uses: Makes a tart, cream-coloured puree. Also used for sharpness in cider, but the apple needs to be picked a couple of weeks early.
origins: A seedling of
Nonesuch raised by the nurseryman Leonard Phillips of Vauxhall Bridge, London (U.K.). Described by Robert Hogg in his 1859 edition of "The Apple and its Varieties" with the comment "It is a fine, showy, and handsome apple, bearing a strong resemblance to the Nonesuch, from which in all probability it was raised. It originated with Mr. Leonard Phillips, of Vauxhall."
