summary: A mid-season, heritage cooking apple that makes a tart and fine-tasting sauce. Considered a good market and garden variety and continues to be available from specialty nurseries in Britain.
identification: Large, round to round-flattened. Greenish-yellow maturing to yellow, often blushed pale orange on the sun-exposed face and marked with a few russet lenticels.. The calyx is large, partly open and set in a shallow, ribbed basin. The stem is short and medium thickness, set in a medium deep and narrow, russetted cavity.
characteristics: The flesh is greenish-white, crisp and tender. Acidic.
uses: Cooking. Makes a sharp and golden sauce.
origins: Likely raised from open-pollinated seeds of Hawthornden by nurseryman Thomas Rivers of Sawbridgeworth, England. in the early 1800s. Introduced in 1847.
cultivation: Moderately vigorous. Slow to start bearing fruit.
