identification: Medium to large, ovate and angular on the sides. The skin is rich yellow, blushed bright red with darker stripes on the sun exposed face and sparsely marked with large russet lenticels. The stem is very short and set in a wide cavity.
characteristics: The flesh is yellowish, firm and crisp. Juicy and slightly tart.
uses: Cooking. Makes a richly flavoured, slightly tart sauce.
