Idared
type: Culinary, Cider, Dessert, Pie, Sauce
synonyms: Ida Red
identification: A medium to large apple, round with faint ribbing. The base colour is greenish-yellow covered up to three quarters with a bright red wash. The skin tends to be smooth, tough and shiny. The calyx is small and closed, set in a deep and narrow basin. The stem is short and medium thick, set in a narrow and deep cavity. Some russeting can occur at the stem end during particularly humid growing seasons. When ripe, the apple has a waxy feel.
characteristics: Flesh is pale yellowish—sometimes with a rosy tint— and firm, fine-grained. Sweet-tart and juicy. Tends to be somewhat bland when picked early for supermarket sales.
uses: Best suited for apple sauces and pies. It holds its shape well which makes it an eye-catching baked apple. Popular for making apple strudel. Some cider makers favour this variety.
origins: Developed by Leif Verner (head of the Department of Agriculture at the University of Idaho, 1934 to 1948) in 1935 at the Idaho Agricultural Experiment Station in Moscow, Idaho (U.S.A.), by crossing
Jonathan with pollen from
Wagener . The cultivar was released in 1942.
cultivation: Moderately vigorous, spreading spur bearer. Precocious. Bears annually with consistently good crops, but tends to overbear, requiring post-bloom thinning. Does best in moderate to cool climates and in a location sheltered from the wind. Particularly adaptable to dwarfing root stock and responsive to training as in trellis and espaliers.
cold storage: When picked a few days early, it lasts as long as four months, though the flavour becomes somewhat bland. Bruises easily.
vulnerabilities: Highly susceptible to canker, mildew and rust, somewhat to scab and fire blight.
harvest: Ripens during the first half of the fourth period (160 to 170 days from petal drop) and the fruit tends to hang well.
notes: Pink apple sauce is usually made using Idared apples by cooking with the skins on and then straining the sauce.
