identification: Large, round to round-flattened. Green, blushed brownish on the sun-exposed face. The calyx is small and closed, set in a medium-deep, somewhat narrow, lightly ribbed basin. The stem is short and somewhat stout, set in a deep and narrow, russetted cavity. Develops some greasiness as it matures.
characteristics: The flesh is yellowish, coarse-grained, firm, crisp. Very acidic.
uses: Cooking. Best used for apple sauce.
