summary: Norfolk Beefing is an old English apple variety used primarily for cooking and drying.
identification: Medium tending to large size, Round to flat rounded. The skin is green, maturing to yellow and extensively washed with dark red marked with faint striping. In highly coloured fruit, the base colour may show through as yellowish patches on the shaded face. The calyx is large and open set in a wide, shallow, ribbed basin. The stem is very short and somewhat slender, set in a deep, russeted cavity.
characteristics: The flesh is greenish, coarse-grained, firm and crisp. Dry and tart, but becomes more sweet as it matures in storage. Tough skinned.
uses: Cooking as well as making dried apple rings. Sugar coated Norfolk Beefins (biffins) were made using this apple by drying them in the cooling oven after bread has been baked. Holds its shape in pies.
origins: Earliest record is from Mannington Hall, Norfolk (U.K.) in 1698. May have come from continental Europe. It was first described in the 1840s but was not listed in any nursery catalogues.
cultivation: Vigorous, upright spreading tree. Bears fruit on spurs. Produces good crops that will hang on the tree into winter.
