identification: Small, round flattened. Base colour is greenish yellow, blushed reddish pink and marked with darker striping.
uses: One of several varieties used for the bitter-sweet component of Brittany-style apple cider. Typically, bitter-sweet cider apples make up about 50% of the total weight of the fruit used.
origins: Arose as a cider apple in the area of Vimoutiers, Normandy (France) during the 1800s.
cultivation: Starts to bear fruit quite young.
cold storage: Does not keep more than a couple of weeks.
harvest: Ready for harvest in the latter half of the fifth period, but need to mature after picking for full flavours.
notes: This is one of about 30 varieties of French cider apples listed for use in the making of Calvados apple spirits. Resembles the Binet Violet closely enough to cause confusion with that variety.
