identification: Large to very large, round conic and often irregular in shape. Green skin with russet spots, becoming golden when ready to be picked; russet patches sometimes develop at this stage. The sun exposed face may show a faint brownish blush. The calyx is small and closed, set in a shallow,wide and puckered basin which is surrounded by an irregularly knobbed crown. The stem is short and thick, set deep in its cavity.
characteristics: Very tart when the skin is green, but softening and becoming slightly sweeter when the skin starts to yellow. However, in many climates the Lord Derby does not fully mature. The flesh is white, coarse-grained, soft and dry. Sweet-tart.
uses: A culinary apple, it retains it shape but turns pink when cooked. Good for pies though it is often prefered just a bit unripe for a tarter taste. Once it turns yellow, it loses mu its flavour as well as its tartness. Use brown sugar to sweeten for the best flavour.
origins: This is a seedling, likely from a Catshead , cultivated by Whitham, manager of a nursery in Cheshire (U.K.). First documented in 1862.
cultivation: Vigorous, upright spreading. Spur bearer. Crops well annually. Suited to damp, clay soils and tolerates cool temperatures.
