identification: Medium to large size, oblong and much higher than it is wide. The skin base colour is pale yellow, sometimes almost porcelain white, over which is a bright red blush on the sun exposed face. Skin becomes greasy at maturity and in storage. The stem is short and slender, set in a narrow cavity. The calyx is small, closed and set in a narrow basin.
characteristics: The flesh is white, tender, fine-grained, crisp and juicy. Sweet, aromatic, sprightly with a vinous flavour. Bruises easily.
uses: A unique and excellent dessert apple. Holds its shape for baking. Flavourful apple sauce and apple butter.
origins: Originated in the Black Sea area of Eastern Europe during the early 1800s or prior, either on the Crimean Peninsula on the north shore, or in Turkey's southern Sinop Peninsula after which it is named.
cultivation: Dwarf, upright pyramidal trees with minimal vigour on their own roots. Bearing on spurs. Produces heavy crops annually. Best used as a garden apple rather than in a orchard setting.
cold storage: Keeps well for about four months.
vulnerabilities: Susceptible to most disease, but resistant to rust.
harvest: In the middle of the fifth period.
notes: Kandil Sinap translates as “candle of Sinop.” Sinop is a city on the Black Sea in northern Turkey.
