identification: Medium size tending to large, bell-shaped, oblong to oblong-conic with a slight waist. Often lopsided. The base colour is green maturing to yellow and blushed red on the sun-exposed face. Indistinct, medium-size, dark russet lenticels are abundant against the blushed surface. Networked russetting over the surface radiating out from the stem cavity. The calyx is medium-size and closed, set in a medium deep and narrow basin which is surrounded by a five-knobbed crown. The stem is medium long and slender, set in a deep and narrow cavity which is russetted.
characteristics: The flesh is white to pale yellowish, very firm, crisp and dry. Tart, some sweetness, with an unusual aroma.
uses: A cooking apple that keeps its shape when cooked. Also eaten out of hand, though it tends to be quite sharp.
origins: Thought to have originated in either Switzerland or in the region of Hamburg in Germany during the mid-1800s. Once widely grown in Europe
