It is also considered by some to be the no more than a colour variation of the Fenouillet Gris and does not justify its ranking as a distinct cultivar. However, the difference between the Fenouillet Rouge and the Fenouillet Gris is consistent enough to uphold separate listings.
summary: Grown throughout continental Europe during the Middle Ages, this reddish russet apple is said to have medicinal properties. It is most widely used for fresh-eating and cider and continues to be available today.
identification: Small to medium size, round and flattened at the ends. The skin base colour is greenish yellow, over which is a reddish wash that covers almost the entire surface. Russetted reddish brown on the sun-exposed face and more grey on the shaded side. Abundantly marked with small grayish lenticels. The stem is long and stout, set in a shallow basin. The calyx is small, closed and set in a wide and moderately deep basin.
characteristics: The flesh is pale cream colour, fine-grained, firm and crunchy. Moderately juicy. Very sweet with a musky, licorice flavour. It often has a slightly bitter after-taste.
origins: Grown in France for cider. Known among the monks of the Normandy region in northwestern France in the early 1400s. Described in 1667 by Merlet in "L’Abrégé des bons fruits" under the name Bardin. Henri-Louis Duhamel du Monceau devoted a full page to this apple in his "Traite des Arbres Fruitieres" (published 1768).
