Caudle
type: Cooking, Dessert, Eating, Pie, Sauce
synonyms: American Cameo, Cameo, Carousel
summary: Found as a chance seedling in a Washington State (U.S.A.) orchard, the Caudle resembles a Delicious apple, but keeps longer in storage.
identification: Medium to large size, conic. Cream background covered with bright red blushes and light-coloured lenticels. However, there is a considerable variety in the colouration, ranging from dark red and a pale green with pale orange flushes. Differs from the look-alike Red Delicious in that the latter has a solid colouring while the Caudle is striped. The stem moderately long and slender, set in deep and moderately open cavity which is sometimes lined with russet, but often green. The eye is closed and small, set in a somewhat narrow and deep basin.
characteristics: Flesh is fine-grained, dense and tender. Very juicy and sweet, lightly tart with a pronounced Asian pear flavour.
uses: A tasty, sweet and refreshing eating fresh, but also an excellent choice for cooking. The slices hold their shape well in pies and tarts, good in salads and makes a wonderfully sweet and tart sauce. Allow a few extra minutes of cooking time to compensate for the denseness of the fruit.
origins: Found as a chance seedling in 1987 by Darrel Caudle in a block of
Stark Delicious trees at his Wenatchee River orchard near Dryden, Washington State (U.S.A). The parentage is uncertain, but likely
Golden Delicious which were grown nearby provided viable pollen to the block. The fruit does resemble the shape of these. Commercial production began in the early 2000s.
cultivation: Vigorous. Precocious but the fruit is poor for the first three or four years and young trees are prone to bitter pit. The flowers set heavily and require strong thinning to prevent the tree from producing biennially. Tolerates Hardiness Zones 5 to 8.
cold storage: Best flavour develop after a month in storage; will keep for up to five months in normal cold storage and up to a year in a commercial controlled atmosphere facility.
vulnerabilities: Susceptible to scab, blight and mildew. Fruit from young trees is prone to bitter pit. Moderately susceptible to brown rot.
harvest: Fruit ripens midway through the fifth period and usually requires two pickings. 155 to 165 days after full bloom.
pollination peak: 1
ploidism: Diploid. Self sterile.

harvest period: 5
