summary: This is a flavourful, russetted eating apple, especially after a month or two in storage. Also makes wonderful apple pies and crumbles. Holds shape when cooked.
identification: Medium to large. Round conic with pronounced ribbing. Sometimes irregular in shape and often lopsided. Green yellow skin is almost completely covered with an olive russet, giving it a rough feel. Sometimes a faint orange blush can develop on the sund exposed face. Lenticels are star shaped and prominent. The woody stem is short and stout, set in a wide and deep, russetted cavity. The calyx is small, semi-open and set in a deep basin which is surrounded by a knobbed crown.
characteristics: The flesh varies from cream coloured to light greenish. Firm in early season but soft when fully ripened. Coarse textured, breaking. Somewhat dry, but very sweet, slightly spicy and somewhat tart. The sharpness matures out in storage, but the apple also turns somewhat crumbly.
origins: An old variety probably originating from Normandy in northwestern France around 1771. Grown commercially in France where it was a popular variety usually called the ’Canada.'
cultivation: Vigorous, upright spreading, spur bearer. Bears the best crops every other year.
