identification: Large, round, sometimes with angular sides. Smooth and yellow, washed bright red on the sun exposed faces and lightly striped. The eye is large and partly open, set in a shallow but deep basin which is sometimes surrounded by a vague crown. The stem is short to medium and slender, set in a medium deep and narrow cavity which is lightly russeted.
characteristics: The flesh is greenish, firm and chewy. Tart.
uses: Cooking. Makes a sweet sauce.
