identification: Medium to large size, round to round cylindrical, often lumpy. The base colour is green maturing to yellow, sometimes with a reddish pink blush on the sun exposed face. The eye is open and large, set in a wide and moderately deep basin which is surrounded by an irregularly knobbed crown. The stem is medium short, slender and set in a deep, narrow cavity which is generally russeted. Thin skinned with a pale bloom at maturity. Easily bruised.
characteristics: The flesh is creamy white, coarse grained and soft. Sweet, winey and aromatic. High Vitamin C content.
uses: Culinaryg. Slices hold their shape and become sweet? tart, very flavourful and bright yellow. Also used to make d apple rings. Apple gelly.
origins: Raised by Ernest Baltet and introduced in 1869 by Baltet Fr res, Croncels, Troyes (France). The flower parent thought to be Antonovka.
cultivation: Vigorous, spreading. Produces heavy crops.
cold storage: Does not keep well; the fruit becomes mealy soon after harvest.
