identification: Small, conic and waisted about two-thirds up the sides toward the crown. The glossy skin has a yellow base colour. On the sun-exposed face, this is blushed pale red over which are bright red streaks, while the shaded side has pale red streaks with the base colour showing through. The entire apple is marked with russet lenticels. The stem is short to medium, set next to a fleshy swelling in a deep and wide cavity. The calyx is small and partly open, set in a rather deep and narrow basin, surrounded by a knobbed crown. Smooth and glossy.
characteristics: The flesh is cream-colooured, crisp. Firm and somewhat dry and tart with pronounced flavours. Quick to turn brown when exposed to air.
uses: Primarily considered a cider apple, but also favoured for pies and sometimes eaten fresh off the tree.
origins: Listed by William Forsyth in "A Treatise on the Culture And Management of Fruit-Trees" (published 1802) as Skerm's Kernel. Though its origins are obscure, British pomologist Robert Hogg maintains in the 1885 Herefordshire Pomona that the variety was grown by the Skyrmes family in the Herefordshire area prior to 1788. It was thought to have become extinct in the U.K. during the mid-1900s and scionwood was sent from collections in the U..S and reintroduced in the early 2000s.

notes: According to Robert Hogg in the 1885 Herefordshire Pomona "This Apple is very highly esteemed, and thought by many cider fruit growers to be second only to the Foxwhelp, and to partake somewhat of its character. Its cider has a peculiar flavour of its own, which improves very much by keeping; but it is better mixed with other apples of its season, such as the Styres, Styre Wilding, Strawberry Norman, &c. If made by itself it is apt to turn dark coloured on exposure to air, even in the glass."
juice character: Makes an acidic, dark amber must and is best blended with sweeter cider apples.
