identification: Medium size to large, oblate. The smooth skin is greenish yellow and profusely marked with large, raised russet spots, sometimes blushed orange with darker stripes on the sun exposed face. Light dots are scattered across the surface, predominantly onthe shaded face. The eye is medium large and partly open, set in a shallow and wide, faintly ribbed basin. The stem is short and slendeer, set in a russet lined cavity.
characteristics: The flesh is white, firm. Juicy and very sharp..
uses: Cooking. Makes a richly flavoured, tart and creamy sauce.
