identification: Large to very large. Round to round conic with pronounced angular sides. Tough, pale-green maturing to orange-yellow skin. Patches of russet and sometimes a brownish blush. Raised lenticels. The stem is short and stout, set in shallow, russetted cavity, often with a fleshy protuberance. The calyx is large and usually open, set in a shallow, wide basin which is often surrounded by a knobbed crown.
characteristics: The flesh is cream-coloured, medium-grained, firm and tender. Juicy, very sweet and slightly tart. Mild flavour.
uses: At one time, this apple was used primarily for feeding livestock. Later, toward the end of the 1800s and into the early 1900s, it was commercially used for making apple butter. Well suited to baking, canning and drying. "Very valuable for baking and stock feeding," stated Charles Downing in his 1872 revision of "The Fruits and Fruit Trees of America."
origins: Originated in early 1800s in the orchards of S. Lyman at Middlefield, Connecticut (U.S.A.). First recorded in 1834. Described by Dr. John Ashton Warder in "American Pomology: Apples" published 1867 and by Charles Downing in the 1860 version of "The Fruit and Fruit Trees of America."
cultivation: Vigorous, large, upright spreading tree with drooping branches. Tip bearer. Bears good crops every other year. Windfalls can be a problem when planted in areas of heavy winds.
cold storage: Keeps three months.
vulnerabilities: Prone to canker, mildew, blight and rust and sensitive to sun scald. Has a tendency to water core.
harvest: The last half of the third period and into the fourth with apple ripening irregularly through this period.
