Pomme de Glace

identification: Medium to large, round to oblate. The base colour is green marked with pale dots. Blush dull orange on the sun exposed face and blemished with dark lenticels. The eye is medium size and closed, set in a shallow and wide basin which is sometimes surrounded by a faintly knobbed crown. The stem is short and stout, set in a deep and narrow cavvity which can be lightly russeted.
characteristics: The flesh is greenish white, firm. Sharp and fruity.
uses: Cooking. Makes a tart, very flavourful, golden sauce.
cultivation: Moderately vigorous.
harvest: Late in the fourth period.
notes: The Calvelle Blanc d’Hiver and the White Astrachan are both also known by the synonymnPomme de Glace.
