identification: Medium, russetted apple, round and flat in shape with barely discernable ribbing. Base colour is yellow to orange which is almost entirely covered with russet. Some blushing on the sun-exposed face, look for copper or orange patches on fully ripe apples. Large lenticels are scattered irregularly. Look for a mild cheesy smell on the skin which seems to be characteristic of russets. The stem is short and heavy, set deep cavity. The calyx is large and open, set in a moderately deep and wide basin.
characteristics: Flesh is cream-coloured, medium fine-grained, tender and chewy with just a bit of crunch. Dry and sweet with aroma of orange peel and honey, nutty. Let it mature a while in storage to enhance the flavour.
uses: A good cooking apple which maintains its shape and lovely in baked apple recipes. Eaten fresh for its delightful, nutty flavour.
origins: An old European apple grown widely in France perhaps a decade or more prior to 1776 when it received mention by Dutch pomologist, author and teacher of mathematics, Johann Herman Knoop.
