identification: Medium to large size, round and flattened at the ends. Smooth with a greenish yellow base colour, flushed red on the sun exposed side with darker, broken red stripes. Some russet striping. The eye is small and partly open, set in a shallow and narrow basin, sometime surrounded by a lightly knobbed crown. The stem is very short and slender, set set in a shallow and narrow cavity.
characteristics: The flesh is yellowish, crisp and firm, brisk.
uses: Cooking. Makes a flavourful apple gelly. Slices hold their shape and make an excellent apple pie as well as tarts.
