New German
type: Cooking, Eating, Sauce
identification: Medium to large size, conic and very angular with five prominent ribs interspaced with lesser ribs. Puckered at the eye and waisted near the crown. The glossy skin is yellow but washed almost entirely with a dark mahogany red on the sun exposed side while the shaded side is intermittently striped red. The eye is very small and closed, set in a shallow and very narrow basin surrounded by a knobbed crown. The stem is short and slender, set in a deep, wide cavity.
characteristics: The flesh is greenish, coarse?grained, soft and tender. Juicy and sweet, sprightly. Aromatic. Keeps two months in cold storage.
uses: Sometimes eaten out of hand, but primarily a cooking apple which makes a sharp, fruity, cream coloured sauce.
