summary: A tasty, brisk summer apple that originated in Russia. Good eaten fresh but also makes great pies and sauce.
identification: Medium tending to large. Round and flattened at the ends, occasionally round conic. The skin is glossy and smooth, ivory over which is a pink blush and a pattern of fine red stripes. Small, light coloured, faint lenticels. The calyx is small, closed and set in a shallow, open basin which can be lightly ribbed. The stem is long and slender, set in a narrow but shallow cavity which is usually russet lined. A pale blue bloom develops over the skin at maturity.
characteristics: The flesh is very white with red stains next to the skin. Fine textured and firm. Juicy and sweet-tart but it tends to over-ripen quickly, becoming mealy on the tree.
uses: A refreshing early eating apple, it also makes an excellent pie and sauce. Somewhat like the Yellow Transparent though more flavourful and finer grained.
origins: The variety originated in Russia during the 1700s and was one of more than 350 varieties collected between 1879 and 1885 by J.l. Budd from Iowa State Agricultural College (U.S.A.) and Charles Gibb of Quebec (Canada) in an attempt to find winter-hardy apples for North America.
cultivation: Vigorous, upright tree. Hardy, moderately vigorous. Bears respectable crops annually.
