synonyms: Sometimes erroneously called Imperial McIntosh. This name actually refers to the Imperial Red McIntosh which is a sport of the Mac.
identification: Medium tending to large in size, round and slightly conic. Ribbed at the eye and slightly on the body. Smooth skin.Base colour is green but almost completely covered with red tending to maroon. Light coloured, russet lenticels. The eye is very small and closed, set in a narrow and somewhat deep basin. The stem is short sometimes medium length and stout, set in medium deep, wide and often russeted cavity.
characteristics: Flesh is very white, often with faint red stain under the skin. Somewhat crisp, tender and with a fine grained. Juicy and sweet with a hint of strawberry. Tends to somewhat tangy when first picked and then sweetens with storage. Brix 10.5, acidity 5.0 g/litre
uses: Dessert apple. Makes a foamy, sweet sauce. Also a good choice for apple pies.
origins: An open pollinated McIntosh seedling raised by Dominion Horticulturist William Macoun (1869?1933) at the Central Experimental Farm near Ottawa, Ontario, Canada in 1923. selected in 1930.
