identification: Medium size tending to small, round to round-conic. The skin is golden yellow at maturity, often flushed on the sun-exposed face and marked with an abundance of dark lenticels on all surfaces. The calyx is moderately small and partly open, set in a shallow and narrow basin which may be faintly puckered. The stem is short and stout, set in a shallow and narrow cavity which may have a swelling next to the stem and dark cinnamon russetting. The swelling gives the apple the oval appearance of ripe lemon, but is not necessarily part of its profile. Most Lemon Pippins actually are simply round to round-conic, with no swelling.
characteristics: The flesh is cream coloured, firm and coarse-grained. Dry and sharp, lightly aromatic. Some people say it has a prominent aroma of freshly cut lemons, others fail to detect that characteristic. The flesh does not brown when exposed to air.
uses: Cooking and dessert
origins: First described under the name Lemon Pippin by William Ellis in his 1744 edition of "Modern Husbandman," but the apple is believed to have originated as many as two centuries earlier in Continental Europe—most likely the Normandy region of France—and was referred to as the Quince Apple, or regional versions thereof. Among them was John Worlidge in "Vinetum Britannicum" which was published in 1676 listing the Quince Apple as "a very good Table-fruit and then not bad for for Cider."
