Lady Alice

Lady Alice
type: Dessert
synonyms: Sometimes referred to as Alice.
summary: Though primarily grown in Washington state as a commercial eating apple, it is also sufficiently firm and flavourful to make excellent apple pies.
identification: Medium tending to large. Round. When fully ripe, the base colour is yellow, marked with a dense pattern of red striping that becomes a wash on the sun exposed face. Scattered, small russeted lenticels. The calyx is small and partly open, set in a medium deep and somewhat narrow basin. The stem is long and medium thick, set in a deep and narrow cavity which is sometimes lightly russeted. Smooth and shiny with no bloom or greasy feel.
characteristics: The flesh is yellowish, fine-grained and tender when fully mature. Juicy, sweet, sprightly and flavourful. The flavour is honeyed pineapple with light almond undertones. The skin tends to be a touch tough. Resists browning when sliced open.
origins: Found by Don Emmons as a chance seedling on his farm near Gleed, in Yakima County of Washington (U.S.A.). The property had a long abandoned fruit orchard when he purchased it in 1978 and, in the course of turning the soil in 1979, his plough struck and damaged the trunk of an old Delicious apple tree. A few years later, he found a shoot growing from the damaged tree. On the basis of that story, it is thought that the apple might be a mutation or regeneration from Delicious, yet it is more likely a sucker that grew off the root stock after it was damaged. Rainier Fruit Company acquired the rights to the market the apple and it was named for Don Emmons’ grandmother. The apple was introduced in 2008.
cold storage: Keeps up to five months in commercial storage conditions. Typically, these apples are stored for four months and then released to supermarkets over a four-week span.
cold storage weeks: 20
hardiness: 4
