identification: Very large, round, sometimes round-flattened. The base colour is greenish yellow over which is a bright red wash with faint striping on the sun-exposed face. The eye is small and partly open, set in a deep and narrow basin. The stem is short and medium stout, set in a medium deep and medium wide, lightly russetted cavity.
characteristics: The flesh is white, fine-grained, firm and somewhat tender. Sharp.
uses: Cooking. Well-suited to making a tart apple sauce.
