The skin is green maturing to yellow and washed red on the sun exposed surfaces.The eye is small and closed, set in a deep and narrow basin which is ofen surrounded by heavily knobbed crown. The stem is short and stout, set in a deep and narrow cavity which is surrounded by a light russet which radiates onto the shoulder.
characteristics: The flesh is cream coloured, crisp. Acidic.
uses: Cooking. Makes a brisk, flavourful, cream coloured sauce.
origins: A Belgium variety, local to West Flanders.
