identification: Medium size tending to large, round conic with ribbing and a prominently ridged crown. Skin is rough, dry. The base colour is greenish yellow maturing to yellow over which is a bright red blush with darker striping and interlaced with patches of ochre russetting, some years covering entire apple. The lenticels are mixed green and russet. The calyx is small and closed, set in a shallow basin. The stem is short and set in a deep, narrow and russetted cavity.
characteristics: The flesh cream-coloured, fine-grained and firm, but somewhat dry. Spicy, lightly tangy, nutty, rich flavour with hints of pineapple.
uses: A highly regarded heritage eating apple.
origins: First mentioned by noted British parliamentarian and baronet of Cornwall (U.K.), Sir Christopher Hawkins, in 1813 in the London Horticultural Society's Transactions in which he revealed that the variety had been grown in Cornwall for many years. In the "The Coloured Figures and Descriptions of the Most Esteemed Kinds of Apples and Pears" (published 1876) the noted British pomologist, Robert Hogg, states that "the origin of this excellent variety is nowhere given, and its name alone affords any indication of the locality in which it was produced." Edward A, Bunyard in his "A Handbook of Hardy Fruits More Commonly Grown in Great Britain" (published in 1925) suggests that it "originated in Cornwall, perhaps in the seventeenth century."
