identification: Large to very large. Cylindric. The skin colour is green maturing to lemon yellow, almost entirely washed red and striped with darker red on the sun exposed face. Heavily marked with russet lenticels. The calyx is partly open and moderately large, set in a deep, pleated basin surrounded by faint crowning. The stem is short to moderate length, set in a narrow and shallow, russetted basin. Thick skin.
characteristics: The flesh is white, fine-grained and crunchy. Juicy, very sweet and fruity.
uses: A dessert apple also used for cooking. Makes an excellent juice and cider.
origins: Brought from Crimea to France by a Napoleonic soldier named Nicolas Puy in the early 1800s. Widely grown in the Santerre region of northern France.
cultivation: Vigorous. Spur bearer. Produces fruit every other year. Does not do well on M9 or M106 rootstock.
cold storage: Keeps up to three months in cold storage.
vulnerabilities: Resistant to scab, canker and mildew.

notes: The seeds can be heard rattling when the apple is ripe.
