summary: A cross of Northern Spy and Delicious, this apple is big and dense, but left to mature, it makes tasty pies and baked goods.
identification: Large, tending to very large. Round-conic to conic with faint ribbing. The base colour is greenish yellow, over which is a bright red blush that covers approximately two-thirds of the surface over which are scattered stripes. Light-coloured lenticels. The stem is medium stout and short, extending shy of the knobbed shoulder an set in a deep and narrow, russetted cavity. The calyx is small and closed to partly open, set in a wide and shallow basin.
characteristics: The flesh is yellowish, coarse-grained, very hard, somewhat tart. Juicy, sweet with a spicy, slightly nutty, apple flavour, sometimes with hints of cinnamon.
uses: Favoured for pies, crisps and apple sauce.
origins: Developed by apple breeder Garfield Shults of Homedale, Idaho (U.S.A.) by crossing Northern Spy x Stark Delicious . Released in 1982.
cultivation: Vigorous. Bears fruit annually. Spur bearer. Does best in warm climates and tolerates even tropic conditions.
cold storage: Keeps up to six months in storage, sometimes more, with flavour maturing through this time.
harvest: Ready for harvest late in the fifth period. Will hang well beyond maturity.
notes: The name of this apple is not an indication of its flavour, but rather a commentary on its unusually dense, hard flesh.
