summary: A British bitter-sharp cider apple, rated as a vintage variety which can be used to make a single varietal cider.
identification: Small to medium, round to round conic. Pale yellow base colour, washed and striped red. Skin tends to be somewhat rough.
characteristics: The flesh is yellowish. Firm. Tannic.
origins: Believed to have originated near Martock, Somerset (U.K.) before the 1400s. No information on the parentage but thought to be related to the Lambrook Pippin.
cultivation: Vigorous, spreading tree; medium size with spreading branches. Produces heavy crops every other year.
cold storage: Does not keep well. Best left to gather its sugars and flavours for a week or two, then pressed.
vulnerabilities: Susceptible to scab and canker.
harvest: Late fourth or early in the fifth period.
juice character: Highly regarded as a single variety cider apple. Aromatic and fruity with some complexity, spicy. Also used in blending with sweet apples for a rounder, higher alcohol style of cider. Slow fermentation.
