summary: A highly-rated cider apple that produces well with fragrant fruit; from the Normandy region of France.
identification: Small tending to medium, round-flattened. Greenish-yellow base colour, blushed red and marked with darker stripes on the sun-exposed face. Small greyish lenticels, sometimes black. The calyx is closed, sometimes partly open, set in a wide and somewhat deep basin which is pleated and surrounded with a knobbed crown. The stem is long and slender, set in a deep and narrow, russetted cavity.
characteristics: The flesh is pale yellowish, fine grained and firm. Hard. Somewhat dry, sweet, slightly bitter, flavourful and aromatic.
uses: Distinctly a cider apple and unsuitable for eating fresh or for culinary purposes. It is, however, an excellent pollinator for other apples, providing highly viable pollen over a long bloom period.
origins: Grown in the Haute Normandie region of northwestern France and described by de Boutteville and Hauchecorne in their "Le Cidre" (published in 1873) as being a very old variety of unknown origin. They refer to a large Binet Rouge and a smaller version by the same name, suggesting that both are the same variety.
cultivation: Weakly to moderately vigorous, flattened crown. Tolerates frosts during the flowering period. Produces exceptionally heavy crops every other year. Does not do well in areas of high winds or drought.
cold storage: Does not store well, but can be sweated for up to three weeks prior to pressing.
vulnerabilities: Prone to scab, mildew and fire blight. Resistant to canker.
harvest: In the middle of the fifth period.
notes: This is an excellent source of pollen for other apple trees within its flowering group. The Binet Rouge is one of about 30 apple varieties designated for the making of Calvados apple spirits. It is approved for the Appellation d'Origine Contrôlée in the region of Normandy.
