synonyms: Belle Cacheuse
identification: Small tending to medium, round flattened, often lopsided. The base colour is greenish yellow over which is a dull red wash marked with faint reddish stripes and a limited number of small lenticels. The calyx is small and partly open, set in a wide and somewhat deep basin. The stem is slender and medium length, set in a deep and narrow cavity is russetted with streaks extending down over the shoulder.
characteristics: The flesh is pale yellowish, firm, coarse grained. Juicy, sweet and mildly aromatic.
origins: Grown in the Pays de Caux region of Normandy in northern France. Introduced in 1868 by nurseryman Legrand of Yvetot who grew the apples from seeds he received.
cultivation: Vigorous, dome-shaped growth. Biennial with good crops.
cold storage: Matures after one month in storage.
juice character: The must is thick and quite sweet. However, it does best as blended with bitter and sharp varieties.
