identification: Medium to large, round and sometimes oblong with pronounced ribs ending in a heavily knobbed ridge at the eye. The base colour is green, washed red and marked with prominent russeted lenticels which are surrounded by red halos. The eye is large and partly open, set in a deep and narrow basin which is surrouned by a heavily knobbed crown. The stem is ??????????????????
characteristics: White flesh tends to be firm, dry and acidic. When first picked, it is tart, but it sweetens up quickly in stor age.
uses: Widely used as a cooking apple in Northern Ireland, es pecially for a brisk, flavourful and light?coloured apple sauc Inherent tartness also makes this a lovely apple for baking.
origins: Originated from Northern Ireland. variety is in the Reverend G.V. Sampson s 1802 Statitiscal Sur vey of County Londonderry.
