identification: Medium to large size. The base colour is greenish-yellow, washed red and marked with darker stripes. Small, russetted lentices. The eye is small and tightly closed set in a shallow and wide basin. The stem is medium length, medium slender and set in a medium deep and wide, russetted cavity.
characteristics: The flesh is slightly yellowish, firm, coarse grained. Juicy, moderately sweet, winey and slightly tart. Aromatic.
uses: Culinary and dessert.
origins: Considered to be a Swiss apple grown in the Aargau region where it may have originated, but it may have originated as a Basque variety in the western Pyrenees, possibly in Roman times.
