summary: A cooking apple which cooks to a sweet-sharp, honey-coloured sauce.
identification: Large, round and somewhat flattened. Base skin colour is yellow over which is an orange blush and deep pink striping. The calyx is small and closed, set in a medium deep and funnel-shaped basin. The stem is short and slender, set in a deep and narrow cavity which may be russetted.
characteristics: Flesh is pale cream-coloured, fine-grained and firm. Juicy and tart when first picked, becoming sweeter in storage.
origins: Raised by William Saltmarsh, a nurseryman living near Chelmsford, Essex (U.K.) in the 1870s and introduced in 1890.
cultivation: Moderately vigorous, upright spreading spur bearer.
